Chicken Tikka Masala Meatballs

FOR THE MEATBALLS

1 pound ground chicken

1 egg

1/2 cup panko bread crumbs

Pinch of garam masala seasoning

Pinch of ground ginger

Pinch of ground cinnamon

Pinch of cayenne

Pinch of salt

Olive oil or cooking spray

FOR THE SAUCE

3 tablespoons butter

1 cup chopped yellow onion

2 cloves garlic, minced

1 inch fresh ginger, grated

1 tablespoon tomato paste

1 tablespoon garam masala

2 teaspoons curry powder

1/2 teaspoon turmeric

Cayenne pepper to taste

1 cup canned tomato sauce

8 ounces full fat coconut milk

1/2 cup plain greek yogurt

2 tablespoons butter

2 cups frozen peas, thawed

1/4 cup fresh cilantro, roughly chopped

MAKE THE MEATBALLS

    1. Preheat the oven to 450 degrees F.
    2. Line a baking sheet with a Silpat or parchment paper.
    3. In a medium bowl, mix all of the meatball ingredients.
    4. Using a meatball maker or your hands, roll the meat into 20 tablespoon size balls.
    5. Place meatballs on the prepared baking sheet.
    6. Spray with olive oil or cooking spray.
    7. Bake until meatballs are crisp and cooked through, about 15 minutes.  Set aside until ready to finish the dish.
